Hundreds of restaurants serve pork belly baos in New York, but none are as popular, or as famous as the ones served at David Chang's restaurants. Like the Spotted Pig ? burger, this dish is all about composition. The pork belly is soft and salty, the hoisin sauce adds some base notes, the scallions cut through the richness, and the whole thing is wrapped in a slightly sweet bun. Each Momofuku pork bun tastes just like the first one that you tried. (Photo) [link]
